Botanical Name: Piper nigrum

Country of Origin: India

English Name: Black Pepper Whole

French Name: Poivre Noir Entier

Also Known As: Piper nigrum Whole, Black Peppercorns, Whole Pepper, Dried Pepper Berries, Whole Spice Pepper

Part Used: Dried fruit of the plant, Piper nigrum

Description: Black Pepper Whole is made from the dried fruit of Piper nigrum, a perennial climbing vine in the Piperaceae family, native to the tropical regions of South India and now cultivated widely across Southeast Asia. The vine grows vigorously along trellises or host trees, producing glossy green leaves and slender, spike-like inflorescences. Small berries develop along these spikes, gradually changing from green to red as they reach maturity. The fully ripe berries are harvested when firm, dense, and deep red in colour, which ensures consistent quality for drying and processing into whole peppercorns.

After harvesting, the pepper berries are carefully cleaned to remove stems, leaves, and extraneous debris. The berries are then dried under controlled conditions, during which their outer skin turns deep black and wrinkled while the inner seed hardens. Drying preserves the characteristic pungent aroma and flavour compounds while maintaining the structural integrity and shape of each peppercorn. The result is a uniform, whole dried fruit suitable for various culinary and formulation applications.

The finished Black Pepper Whole consists of small, spherical peppercorns ranging in size and uniformly coloured from dark brown to black. The surface is slightly wrinkled and firm to the touch, reflecting the natural drying process. Each peppercorn retains its internal seed structure, aroma, and pungency. This whole format allows for precise grinding, blending, and storage while preserving visual consistency and functional usability in culinary and other applications.

Uses: Black Pepper Whole is versatile across culinary, creative, and educational uses. It is ideal for grinding fresh over dishes, inclusion in spice mills, and seasoning meats, soups, sauces, and vegetable preparations. The whole peppercorns can also be used in spice blends, pickling, marinades, and processed foods where intact berries are preferred for visual appeal or controlled flavour release. Additionally, Black Pepper Whole is suitable for educational botanical collections, craft projects, and decorative displays that demonstrate the form and structure of dried spice fruits.

Storage: Store in a cool, dry, dark place in an airtight container. Refrigeration not required.
