Description: Onion is a widely cultivated biennial plant grown as an annual crop and valued for its layered underground bulb. The plant typically grows 30–100 cm tall, producing hollow green leaves and a rounded bulb composed of concentric fleshy layers. Onion bulbs vary in size and colour depending on the variety, ranging from white to yellow or light brown skins, with crisp, aromatic flesh. Bulbs selected for granulated onion are harvested at full maturity, when their flavour, aroma, and natural sugars are fully developed.

Fresh onions have a firm texture, layered structure, and a strong, characteristic aroma. After harvesting, the bulbs are cured and cleaned to remove outer skins, soil, and roots. The onions are then sliced evenly and dehydrated under controlled low-temperature conditions to remove moisture while preserving colour, flavour intensity, and aroma. Proper dehydration ensures the onion pieces remain stable and suitable for further processing.

Once dried, the onion slices are milled and graded into granulated form, producing small, uniform particles that are coarser than powder but finer than flakes. The granules are free-flowing, light cream to pale yellow in colour, and retain the distinctive aroma and flavour profile of onion. Sieving removes excess fines to ensure consistent particle size and texture.
