Description: Hyssop is a perennial herb native to the Mediterranean region and widely cultivated in temperate areas. It typically grows 30–60 cm tall with upright, woody stems and narrow, lance-shaped, dark green leaves. During the flowering season, it produces small tubular flowers in shades of blue to violet, forming clusters along the upper stems. The aerial parts are harvested at full growth to retain natural colour, texture, and identifiable botanical characteristics.
The leaves are firm but soft to the touch, growing opposite along slender, slightly woody stems. The stems are flexible at the tips and bushy at maturity, giving the plant a dense, structured appearance. Harvesting occurs during peak flowering to capture both leaves and tender stems.
