Description: Ginkgo is a deciduous tree native to China, often referred to as a living fossil due to its ancient lineage. The tree typically grows 20–35 metres tall with a broad, fan-shaped canopy and distinctive bilobed leaves that turn bright yellow in autumn. Ginkgo trees are slow-growing and can live for centuries. The leaves are harvested from mature trees when fully developed, usually during the peak growing season, to capture their full colour, texture, and aromatic qualities.

After harvesting, the leaves are thoroughly cleaned to remove stems, dust, and other debris.
