English Name: Elderberry Tea

French Name: Thé de Baies de Sureau

Also Known As: Sambucus Tea, Elder Tea, Black Elderberry Tea, Elderberry Herbal Tea

Part Used: Dried berries of Sambucus nigra

Description: Elderberry Tea is a loose-leaf herbal infusion made from the dried berries of Sambucus nigra, a deciduous shrub or small tree native to Europe and North America. The plant typically grows between 3 to 6 meters in height, producing compound leaves with serrated edges and clusters of small, dark purple to black berries. Elderberry plants are perennial, regenerating from their root system each year, and flowering occurs in late spring to early summer with flat-topped clusters of creamy-white flowers. The berries are harvested in late summer to early autumn when fully ripened for optimal flavor, color, and aroma. Only fully mature, dark-colored berries are selected for tea preparation.

After harvesting, the elderberries are carefully cleaned, sorted, and gently dried to preserve their natural color and rich flavor. The dried berries may be left whole or lightly crushed to facilitate brewing. Processing is minimal to maintain the natural aroma and subtle sweet-tart taste of the berries. When brewed, Elderberry Tea produces a deep reddish-purple infusion with a fruity, lightly tart aroma and a smooth, sweet-earthy flavor that is naturally rich and visually appealing.

Uses: Elderberry Tea can be brewed hot or cold. For a hot infusion, add one to two teaspoons of dried berries to a cup of hot water and steep for 5 to 10 minutes, adjusting steeping time for desired intensity. For a chilled version, brew a stronger infusion, allow it to cool, and pour over  some ice. Elderberries can also be simmered in water for longer durations to produce a more concentrated infusion suitable for blends or culinary use.

Elderberry Tea pairs well with other herbs or fruits such as hibiscus, rosehips, cinnamon, or orange peel to enhance aroma and flavor. Light sweeteners such as honey or maple syrup may be added to complement the natural sweet-tart character of the berries. The brewed infusion can also serve as a base for herbal tea blends or as a naturally colored liquid in culinary applications. Its smooth, fruity, and slightly tart flavor makes it suitable for daily enjoyment and versatile for creative herbal beverages.

Storage: In a cool, dry space, sealed against the elements as much as possible.
