Botanical Name: Dipteryx odorata
Country of Origin: Venezuela
English Name: Tonka Beans
French Name: Fèves Tonka
Also Known As: Cumaru Beans, Tonquin Beans, Dipteryx Beans
Part Used: Seeds of Dipteryx odorata
Description: Tonka Beans are collected from the seeds of Dipteryx odorata, a large, slow-growing evergreen tree native to South America, particularly Brazil, Guyana, and Venezuela. The tree typically grows 20 to 30 metres tall, with a dense canopy of glossy green leaves and small fragrant flowers that develop into thick, woody pods. Each pod contains one or two seeds, which are harvested when fully matured and dried naturally over several months, allowing them to develop their characteristic deep brown colour, smooth wrinkled texture, and rich aroma.
After harvesting, the seeds are carefully cleaned to remove pod debris and dust. They are then sorted and dried further to achieve uniform colour and firmness. The beans are elongated and slightly curved, with a hard, glossy surface and finely wrinkled texture. This preparation preserves the botanical identity of Dipteryx odorata while creating a visually authentic and high-quality product suitable for culinary and craft applications.
The finished Tonka Beans are dark brown to black, firm, and aromatic, with a slightly sweet, vanilla-like fragrance. The beans are stable during storage and retain their natural aroma and visual characteristics over time, making them easy to handle, store, and use.
Uses: Tonka Beans are commonly used in culinary applications such as flavouring desserts, baked goods, chocolates, ice creams, custards, and beverages, where they impart a distinctive aromatic profile. They are also suitable for cosmetic formulations, potpourri, fragrance creations, candle making, bath products, and craft projects. Tonka Beans are frequently included in educational botanical collections to demonstrate seed morphology and tropical tree fruiting.
Storage: Store in a cool, dry, dark place in an airtight container. Refrigeration not required.
