French Name: Rumex Acide Coupé

Also Known As: Cut and Sifted Sheep Sorrel, Rumex Acetosella Leaves, Sour Dock, Field Sorrel

Part Used: Leaves of Rumex acetosella

Description: Sheep Sorrel C/S is prepared from the dried leaves of Rumex acetosella, a low-growing perennial herb native to Europe and widely naturalised in North America. The plant typically reaches 15–50 centimetres in height, with slender, reddish stems and arrow-shaped green leaves that sometimes display a reddish tinge along the edges. Small reddish flowers appear in clusters during late spring and summer, followed by tiny seeds. The leaves are harvested when fully mature, displaying optimal colour, texture, and natural flexibility for processing into cut and sifted form.

The harvested leaves are carefully selected for uniformity, ensuring only intact, fully formed leaves are used. Mature leaves are smooth, thin, and slightly glossy, with well-defined veins and the characteristic sour-green hue that distinguishes Sheep Sorrel. Only leaves with preserved natural shape and structural integrity are processed to maintain the botanical identity of Rumex acetosella.

After harvesting, the leaves are thoroughly cleaned to remove dust, stems, and other debris. Drying is performed using controlled air or low-temperature methods to stabilise moisture while maintaining colour, texture, and leaf structure. Once dried, the leaves are cut and sifted into uniform fragments, resulting in a free flowing product with consistent size, colour, and visual appearance.

The finished Sheep Sorrel C/S consists of lightweight, cut leaf fragments with clearly visible veins, natural arrowhead shape, and a uniform green colour with subtle reddish edges. The cut and sifted format allows for easy handling, accurate measurement, and consistent blending, while preserving the natural botanical characteristics of the leaves.

Uses: Sheep Sorrel C/S is used in tea-style infusions, herbal and botanical blends, and culinary preparations where visible cut leaf fragments are desired. The leaves are suitable for cosmetic and bath formulations, craft projects, and educational botanical collections illustrating leaf morphology and growth. They can also be incorporated into infusion-based blends, herbal sachets, and decorative displays. The cut and sifted format allows for flexibility in portioning, blending, and formulation, making it convenient for both home and professional use where identifiable dried leaf fragments are preferred.

Storage: Store in a cool, dry place in a sealed container.
