Description: Sheep Sorrel C/S is prepared from the dried leaves of Rumex acetosella, a low-growing perennial herb native to Europe and widely naturalised in North America. The plant typically reaches 15–50 centimetres in height, with slender, reddish stems and arrow-shaped green leaves that sometimes display a reddish tinge along the edges. Small reddish flowers appear in clusters during late spring and summer, followed by tiny seeds. The leaves are harvested when fully mature, displaying optimal colour, texture, and natural flexibility for processing into cut and sifted form.

The harvested leaves are carefully selected for uniformity, ensuring only intact, fully formed leaves are used.
