Olive trees typically grow between 3 to 10 meters in height and have narrow, elongated, dark green leaves with a silvery underside. Olive is a perennial evergreen, producing new leaves throughout the year, although harvesting for tea usually occurs in late spring to summer when the leaves are mature, tender, and aromatic. Olive trees flower in spring, followed by fruit development in late summer and autumn, but the leaves are harvested independently for their herbal use.
