Description: Mace is the dried aril surrounding the seed of the nutmeg tree, Myristica fragrans, a tropical evergreen native to the Maluku Islands of Indonesia and widely cultivated in warm regions. The tree typically grows 10–15 metres tall with glossy green leaves and small, yellowish flowers. The arils are carefully harvested when fully developed to retain their natural colour, texture, and botanical character.

The arils are thin, lace-like, and slightly flexible when fresh, turning brittle and reddish orange once dried. After drying, they maintain their natural structure and colour, which is ideal for milling. The dried arils are then ground into a fine, uniform powder that preserves the aromatic properties and visual characteristics of the plant.

After harvesting, the arils are cleaned to remove debris and impurities. They are dried under controlled low-temperature conditions to retain colour and texture. Once fully dried, the arils are milled and sieved to remove coarse fragments, resulting in a clean, free-flowing powder suitable for storage, blending, and multiple culinary and botanical applications.
