Description: Knotgrass is a low-growing annual plant native to Europe and Asia and now found in many temperate regions worldwide. It forms slender, wiry stems that spread close to the ground and can reach lengths of 20–60 cm, with small oval green leaves arranged alternately along the stem. The plant produces tiny, pale flowers at the leaf joints during the growing season, and the aerial parts are harvested when the plant is in full growth to retain its natural colour and botanical character.
The dried aerial parts consist of fine stems with small leaves attached, giving the herb a light, grassy appearance. Once dried, the plant material keeps its muted green to brownish tones and recognisable structure, making it suitable for cutting and sifting into uniform pieces for blending and storage.
After harvesting, the plant material is cleaned to remove soil and debris, then dried using controlled low-temperature methods to preserve texture and appearance. Once fully dried, the herb is cut and sifted to achieve consistent particle size, with broken fragments removed, resulting in a clean, free-flowing botanical ingredient.
