Description: Matcha is produced from shade-grown tea shrubs of Camellia sinensis, which are carefully cultivated to encourage the development of tender, bright green leaves. The evergreen tea plants typically grow 1–2 metres tall with smooth, lance-shaped leaves and small white blossoms. Shading the plants several weeks before harvest increases leaf softness and deep green colour, and the youngest leaves are hand-selected during the spring growing season.
After harvesting, the leaves are steamed to stop oxidation, then dried and de-stemmed to produce flat, leaf-only material. These dried leaves are slowly stone-ground into a very fine, vibrant green powder with a smooth, silky texture. This traditional milling process preserves the natural colour, aroma, and consistency of authentic matcha powder.
The finished powder is carefully sifted to remove coarse particles, resulting in a uniform, free-flowing product that disperses easily in liquids and blends smoothly into dry mixtures. Its vivid green colour and fine texture make it distinct among green tea formats.
